Herb Faust's passion for food began in his childhood. He said the amazing tastes and aromas of the fresh Thai food his family shared with local Buddhist monks sparked his love of cooking. "I also remember how sharing a meal really brought people together," he recalls.
Today, Herb draws on his early Thai influences and is passionate about cooking with the best fresh, seasonal produce to create innovative and distinctive dishes.
In 2010, Herb was presented with the once-in-a-lifetime chance to appear in the Australian Iron Chef challenge. He famously went on to be the only ever contestant in the Australian series to defeat an Iron Chef. Keen to share his passion for food, the following year he launched his own business, Herb Faust Food, in his hometown Perth.
He was inspired to become a Starlight Ambassador after his son Jackson was hospitalised as a toddler.
"My wife, Deanna, and I have witnessed first-hand the benefits of Starlight. There was always something fun the kids could engage in to take their minds off how they were feeling," he recalls.
When Herb discovered the opportunity to get involved with Starlight, he said it was only natural to give back to Starlight.

Herb became a Starlight ambassador in 2015 and since then has generously donated his time as a chef at Starlight Five Chefs Perth and auctioning off experience prizes to raise vital funds.
Herb's also helped promote our Star-BQs on Starlight Day, has cooked up a BBQ lunch for sick kids and their families to enjoy at our Starlight Extravaganza event in Perth and helped us promote Sugar Free Me with his live cooking demo from the Starlight Express Room at the Perth Children’s Hospital in 2018.
In 2018, Herb was also part of the official launch of the brand-new Starlight Express Room at the Perth Children’s Hospital alongside fellow ambassador Mike Hussey. It didn't take Herb long before he tested out the room’s new kitchen and has since hosted cooking workshops for hospitalised teens as part of our Livewire program.
